Favorite Red Lentil Recipe


This has been my go-to lentil recipe for a decade. Partly because it's delicious and partly because as long as I have a little parsley growing outside, I almost always have everything on hand to make it. I like to give credit where credit is due, but I don't remember the original source of this recipe.

1 small onion, sliced thinly
1 tbsp olive oil
1 tsp raw sugar 3/4 cup red lentils
1 cup vegetable stock
1 cup water
1/2 tsp powdered turmeric
1 tbsp lemon juice
1/4 cup chopped parsley

To caramelize the onions, heat the oil over moderate heat. Cook the onion slowly until beginning to brown. Sprinkle sugar evenly over onions and stir and continue to cook until onions are brown and sticky.
Meanwhile, in a small saucepan, combine lentils with water, stock, turmeric, salt, and pepper. Bring to a boil, then reduce heat and simmer until lentils are soft and beginning to break down. Turn off heat, and stir in chopped parsley and lemon juice. Ladle into bowls and top with caramelized onions.
