I am fortunate enough to have an orphaned passion fruit vine literally outside my door. The fruit hit the ground last summer, and I didn't know what to do with it because I didn't know what they were (!). Such hard green ovals that overnight seemed to spoil by turning wrinkly and scarred. It took the instruction of a friend to let me know that when passion fruit start looking shabby on the outside, then they're good on the inside!
1 cup of almond milk
pinch of sea salt
splash of vanilla extract
1 stalk of celery (leaves and all)
handful of baby kale
2 handfuls of frozen mango chunks
1 ripe banana
3 passion fruit--just the seeds and the goo inside
Blend all ingredients in a high speed blender. This makes quite a lot--you might want to share or just save the rest for later.
