Green smoothies are one of my favorite meals or snacks. They are quick, tasty, and loaded with good things to make your skin glow. Never had a green smoothie before? Try it—you can't really taste the greens!
1 cup unsweetened soy milk3 generous handfuls of organic baby spinach leaves*
1 ripe banana
1 cup of frozen mango**
the juice of 1/2 a small lime***
a pinch of sea salt
a few drops of vanilla extract
2 tablespoons of ground flax seed (optional but a great source of anti-inflammatory omega-3-fatty acids)
Blend all ingredients on low and then on high until very smooth. Add water as needed while blending if the smoothie is too thick or if your blender is a little wimpy. Serves one hungry person or two people who just need a snack.
*Organic produce can be more expensive or more difficult to find, but it's probably worth it to buy all your green leaves organically grown. Studies have shown that conventionally grown greens are a major source of pesticides in our diet, partly because of the high surface area of all those leaves.
**Finding frozen mango at most grocery stores can be hit or miss. I've found that Trader Joe's carries it consistently.
***It's really nice to add the lime zest, too, but only if your lime is organically grown. The pesticides that build up in the skin of conventionally grown limes make the zest bitter, and you will really taste it if you add it to your smoothie. (It took me a whole bag of CostCo limes and a lot of weird-tasting smoothies to figure that one out).
