My new garden bed is producing a bumper crop of miniature cocktail heirloom cucumbers. I like to eat them out of hand, but here is another favorite option for a cooling summer drink.
6-7 mini cucumbers (or 1 large cucumber)
- Muddle (crush) some mint leaves in the bottom of glass.
- Put ice in the glass.
- Juice the cucumber(s).
- Mix the juice half and half with sparkling water over the ice.
- Squeeze in lime juice to taste, up to half a lime.
- Garnish with thin cucumber slices and lime wedges.
